Green oak is oak that is in an unseasoned state, This means it will have a very high moisture content. This makes it much easier to work with and It will still take a beautiful finish, and over time will dry out (season). If it is allowed to dry rapidly splits and cracks may appear, and these will add to the character of the wood.
