Easy Warm Salad Recipe

With the days getting longer and British summer time just around the corner, it’s time to start dreaming of iced drinks and fresh, summery meals. The tins of soup you stocked up on over winter can remain in the kitchen cupboard, and it’s time to head to the allotment and dig up some seasonal salad!

Lettuce is a salad ingredient which never tends to go out of season, and our simple warm salad recipe for spring uses crisp, iceberg lettuce as the base. Iceberg lettuce always seems to come with the stigma of being boring –  but with the right combination of textures and flavours, you can transform this otherwise plain leaf in to something deliciously delectable!

Simple Warm Salad Recipe

This simple salad is not only really easy to create, but the combination of textures and flavours are refreshingly different to your classic salad recipes. With warm bacon adding a juicy crunch against the cool feta, the watermelon sneaks in to ensure you’re getting a good dose of vitamins, minerals and antioxidants whilst also being low in calories. This salad recipe is easily adaptable to suit your own tastes, and if you’re not feeling adventurous enough for Watermelon, you can easily switch it for Cucumber. Seasoning the dressing is also to your own preference and you can add as much or as little chilli powder as you feel you can handle!

As with most salad recipes, the preparation is simple:

Whilst your bacon is sizzling away under the grill, chop and prepare your ingredients. We like our salads roughly chopped, but with small enough pieces so that you can grab a bit of everything at once on your fork! Toss the base ingredients together (lettuce, tomatoes, onions and watermelon) then crumble the feta cheese over the top. Once your bacon is cooked, pop it over the top so the yummy juices can saturate the ingredients underneath. Yum.

To prepare your dressing, slosh a good helping of Baslamic Vinegar into a separate cup along with a dash of olive oil. The seasoning for this is your own preference and you can make it as spicy as you like! Ensure to mix this well with a fork before drizzling it all over the finished dish.
